The Mad Hatter Tea Party from the Tim Burton Movie

My girls loved the recent Tim Burton Alice in Wonderland movie and Melissa Madeline said we have to have a Mad Hatter Tea Party.   And since I just LOVE tea Melissa Madeline thought it would be the perfect way to celebrate my birthday!

I'll post the menu from the party. Of course my mom's bakery, The Solvang Bakery, made all the fabulous cakes, tarts, cookies and sandwiches.

Quite a few people asked me for the Egg Salad Sandwich recipe saying it was particularly good. The secret of course is to keep it simple! Don't try to fancy it up with extra ingredients. And this is one of the few instances when I think regular French's Mustard is just the mustard you want to use. (I like French's mustard on my Super Pretzel's with cheddar cheese and also in my mom's version of potato salad. It is turns out it is a great source of tumeric too. You can read more about under the Fiddle Version of Egg Salad. But I'm posting the traditional one here since that is what I made for the party.) You can serve Egg Salad a number of ways: on celery sticks, in nasturtium flowers. I like it best on squaw bread or another dark bread. I also like it on Corn Rye. You can do it open-faced or just made a regular sandwich.

EGG SALAD
Makes 3 cups or 9 servings (1/3 cup each)

12 hard-boiled Eggs, (see note below on how to hard-boil eggs)
1/4 cup mayonnaise
2 teaspoons French's Mustard
1/4 teaspoon kosher salt
freshly ground pepper to taste, optional
1/4 teaspoon cayenne pepper, optional

bread if you are making sandwiches. You can also serve this on celery sticks or on cucumber rounds.

To hard boil eggs: place 12 eggs in a pot and cover with cold water. Turn heat to high. When water starts to boil, turn heat completely off and set timer for 10 minutes. Let the eggs sit in the hot water for 10 minutes. After 10 minutes rinse with cold water until they are cool. When they are cold, peel the eggs. (Note: fresh eggs are the hardest to peel the inside of an egg shrinks with each passing day. So try to use eggs that are at least a week or 10 days old.)

Place eggs, mayonnaise, mustard, salt and cayenne pepper in a large bowl. Mash with a potato masher. Stir with a spoon if you need to further combine the mixture.

A 1/3 cup serving is just the right amount for a normal sandwich. I usually use Corn Rye, Squaw or some other type of dark bread.

per 1/3 cups serving: 113 calories. 8.2 grams of fat, 7.6 grams of protein, 7% iron

At first glance, I fell in love with this gorgeous mad hatter tea party. I am sure everyone had blasting time. At some local event space Chicago I also hosted bridal bash for my best friend in last year and had used this theme. It turned out to be fantastic.
